What my husband likes about this Chicken Lettuce Wrap, he said it tastes like the Peking Duck cooked in 4 ways that is being served in Chinese restaurant.   

So in one of our office meetings i served it to let my team taste the Delicious and bursting with flavor,  minced chicken wrapped in Lettuce leaves.  I made sure that plates is big enough and napkins is available since the mixture can sometimes drip a little.

mix in a small bowl the seasoning ingredients dark soy sauce
add the rice wine
add the hoisin sauce and oyster sauce and SET ASIDE
saute garlic in olive oil
saute onions
add minced chicken
for this recipe i only add the tainga ng daga (woodear mushrooms)
add water chestnuts
add seasoning mixture, magic sarap and cook till sauce dries up a little
cooked minced chicken

                             TO ASSEMBLE
put lettuce in a plate and
add the cooked minced chick
add some spring onions
add wansoy (coriander)
wrap the lettuce
around the meat like a burrito
2 lettuce heads, washed, separated
2 tbsp olive oil
1 tbsp chopped garlic
1/4 chopped onions
500 grams ground chicken
1/4 cup chopped water chestnuts

1 cup comprises of  1 tbsp chopped mushrooms shitake
                                1 tbsp chopped oyster mushroom 
                                1 tbsp chopped mushrooms

2 tbsp chopped woodear mushrooms  (tainga ng daga)
2 tbsp spring onions
1 tbsp coriander (wansoy)
dash of magic sarap

1/4 cup hoisin sauce
2 tbsp oyster sauce
1 tsp dark soy sauce (datung puti brand)
1 tbsp rice wine (shaoxing wine brand or any brand )

  •  Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside. 
  • Mix all seasoning ingredients in a bowl. set aside
  •  In a medium skillet, saute garlic and onions in olive oil.
  • add chicken and cook till  brown  stirring often and reducing the heat to medium, if necessary.   set aside to cool. 
  • add water chestnuts, 1 cup mushrooms and woodear mushrooms
  • add the seasoning mixture and magic sarap.
  • cook till sauce dries up a little

  • put lettuce in a plate, spoon a portion of the meat into a lettuce leaf, add spring onions and wansoy .  Wrap the lettuce around the meat like a BURRITO and ENJOY.
  • or you can Arrange  spring onions, wansoy and lettuce leaves around the outer edge of a large serving platter, and pile meat mixture in the center, To serve... allow EACH PERSON to spoon a portion of the meat into a lettuce leaf.
