RECIPE: Carrot Cake Bars with cream cheese icing

I made dinner for our meeting yesterday and made these Carrot Cake Cheesecake Bars for dessert. these bars are so yummy. I bought my ingredients at Dough-it-All* details after ingredients.

Ingredients

sift flour, baking soda, salt & cinnamon 3x. set aside

cream butter and sugar for 10 minutes using medium speed of the mixer

at speed 6, add eggs one at a time beating well after each addition

at low speed, add dry ingredients alternately with water

add Carrots and Dole crushed pineapple

add walnuts and pour into 9 x 13 x 12 rectangular pan, lined with wax paper

bake for 45 minutes or until done

cool on wire rack

                      MAKING THE ICING

place cream cheese

Butter

Vanilla in a bowl

attach the flat beater. turn to speed 6 beat for 2 minutes.  stop and scrape down the bowl. turn to speed 6 and beat for a few seconds.

at low speed, add powdered sugar.  beat until just combined. return speed to 6 and beat for additional 2 minutes.  refrigerate until ready to use


INGREDIENTS:

2 1/4 cups  all-purpose flour
3/4    tsp     baking soda
3/4    tsp     salt
3/4    tsp     cinnamon
3/4    cup    butter
1       cup    sugar
3       whole  eggs
3/4    cup    crushed pineapple, drain the syrup
1 1/4 cups  coarsely chopped walnut
3 1/2 Tbsp water
1 1/2 cups  grated carrots


PROCEDURE


  • Preheat oven to 350 degrees Fahrenheit.
  • sift flour, baking soda, salt and cinnamon 3x. set aside
  • cream butter and sugar for 10 minutes using medium speed of the mixer
  • at speed 6, add eggs one at a time beating well after each addition 
  • at low speed, add dry ingredients alternately with water
  • add Carrots and Dole crushed pineapple
  • add walnuts and 
  • pour into 9 x 13 x 12 rectangular pan, lined with wax paper 
  • bake for 45 minutes or until done.  Cool on wire rack.

CREAM CHEESE ICING

3 1/2 cups  sifted powdered sugar
1       bar    cream cheese softened
1/4    cup   butter softened
1       tsp    vanilla extract or used a pinch of vanilla powder

PROCEDURE
  • place cream chese, butter and vanilla in a bowl
  • attach the flat beater. turn to speed 6 beat for 2 minutes.  stop and scrape down the bowl. turn to speed 6 and beat for a few seconds.    
  • at low speed, add powdered sugar.  beat until just combined. return speed to 6 and beat for additional 2 minutes.  refrigerate until ready to use  


TO SERVE:


Spread Cream cheese icing over cake. cut into bars. and top with Carrots candy if desired.  
 ** for this recipe, i made a royal icing and made a candy carrot design.
